Manhatten-Style Sheep/Halibut Chowder

Ingredients
- 1 tabelspoon olive or canola oil
- 1-1/2 cup chopped onion
- 1 tablespoon minced garlic
- 2 cups julienned carrots about 1-1/2" long
- 2 cups diagonally sliced celery
- 28 oz canned tomatoes
- 2 cups chicken broth
- 4 tablespoons chopped fresh parsley
- 1/2 teaspoon dryed thyme leaves
- 1/2 teaspoon dried basil
- 1/2 teaspoon salt or to taste
- 1/4 teaspoon fresh ground black pepper
- 1/8 teaspoon cayenne pepper
- 2 lbs fish sheephead/halibut Etc...
Instructions
1) In a 4-5 quart saucepan, saute onions and garlic in
oil 2-3 minutes.
2) Add all other ingredients, except fish, and bring to a
boil then simmer for 20 minutes.
3) Add fish and cook until done 5-10 min.
