Manhatten-Style Sheep/Halibut Chowder

Ingredients
  1. 1 tabelspoon olive or canola oil
  2. 1-1/2 cup chopped onion
  3. 1 tablespoon minced garlic
  4. 2 cups julienned carrots about 1-1/2" long
  5. 2 cups diagonally sliced celery
  6. 28 oz canned tomatoes
  7. 2 cups chicken broth
  8. 4 tablespoons chopped fresh parsley
  9. 1/2 teaspoon dryed thyme leaves
  10. 1/2 teaspoon dried basil
  11. 1/2 teaspoon salt or to taste
  12. 1/4 teaspoon fresh ground black pepper
  13. 1/8 teaspoon cayenne pepper
  14. 2 lbs fish sheephead/halibut Etc...

Instructions
1) In a 4-5 quart saucepan, saute onions and garlic in oil 2-3 minutes. 2) Add all other ingredients, except fish, and bring to a boil then simmer for 20 minutes. 3) Add fish and cook until done 5-10 min.
