Hawaiian Tuna Poki Roll

Ingredients
- 1/2 cup cucumber, sliced thin
- 1 teaspoon Thai chili paste
- 1/2 cup soy sauce
- 1 tablespoon fresh minced ginger
- 1/2 teaspoon sesame oil
- 4 scallions sliced thin
- 1/4 cup rice vinegar
- 1/4 bunch cilantro shredded
- 1/4 cup water
- 1/4 cup pickled ginger, shredded
- 2 tablespoons toasted sesame seeds
- 1 pound yellowfin Ahi tuna, cut in julienne strips (best
to use sushi grade tuna - OR - substitute VERY fresh local
yellowtail)
For garnish:
- 1 cup warm seasoned sushi rice
- 2 tablespoon toasted sesame seeds
- 1/4 cup pickled ginger
- 1 tablespoon wasabi
Instructions
Combine all the ingredients except for the fish and garnish
and let set in the refrigerator for one hour. Add tuna and
marinate for 15 minutes. Slightly drain tuna mixture and
mold inside sushi rice. Roll in sesame seeds to "crust" the
rice. Slice to serve. Garnish with pickled ginger and
wasabi.

I kinda stole this one from Roy's Kahana Grill. His
restaurant is on the highway down the road from our Kahana
Sunset condo on Maui. I've had this dish so many times there
that I tried quite successfully recreating it at home. It's
not really a main dish, but one batch with a green salad is a
nice fresh light meal - otherwise it feeds 4 as an appetizer.
